Oh, jeez.  There's so many films whose music/soundtracks I love!  These are just off the top of my head....   

The Shawshank Redemption, V for Vendetta, Braveheart, Star Trek II: The Wrath of Khan, Star Trek: First Contact, the Lord of the Rings trilogy, Gladiator, When Harry Met Sally, Master & Commander: The Far Side of the World, and the 2007 Transformers movie (the orchestral score -- NOT the craptastic "rock" soundtrack) is just a short list.  I own the soundtracks to probably twice as many more films as those I just named.

I own the Ghost Rider movie myself, Storm. I've been a fan of his ever since the early 80's. The movie could have been a little better, but I really liked that scene too. =)

The Marvel comic is much better than the movie was. As a GR fan I'd have to say my reaction to the movie was 'meh'. Not bad, not really great either. They should've gone more 'grindhouse' with it, or mystical. Oh well. Current GR issues are very good, I suggest trying them.

Lots of movies has rockin' good music...my favorites are Brokeback mountain and American beauty. Fascinating movies as well.

ps. there is lots of movies i love only 1 or 2 song from....like 'I've had the time of my life' for example, or 'Caramel' from Closer

My favorite movie theme? Hmmmm, well I have 2. Both by Jerry Goldsmith. Air Force One and Star Trek The Motion Picture.
